Sweet Pepper Hash Brown Baked Eggs



We don't usually do breakfast for dinner but I wanted to mix it up a bit.  I'm thankful I tried it out on a week night versus wasting a Saturday breakfast with this recipe.
 There were many things wrong with this recipe, like the amount of babysitting and prep to bake it.  It required longer cooking time for the eggs (which then we ended up over baking as one of the egg yolks wouldn't cook).  Plus it didn't taste good. It was just really bland. We added salsa to spice it up, but really the salsa was the only thing that was good.

If you want to give it a try, this is the recipe that I used, HERE.  And of course this is nothing against the original author of the recipe, it just doesn't fit our family.
